We choose 2 mediterranean dishes for you. In Turkey, we call those dishes that are cooked with olive oil and veggies olive oil dishes. And 3 of the olive oil dishes we choose for you are quite healthy one.
Our first recipe is artichokes in oil.* This recipe is perfect as a side dish.
Stuffed Grape Leaves, AKA (Sarma)
This recipe is one of the traditional dishes in Turkey. Stuffed Grape Leaves could be served as a main course or as a side dish.
Grape leaves – about 500gr
2 middle size onions
1 ½ cup rice
1 ts tomato paste
2 ts olive oil
Red pepper flakes
Cumin and mint
Put the leaves in hot water for 3-4 mins, wash and strain.
Grate the onions and add olive oil on a large bowl.
Wash the rice and add to the bowl.
Add tomato paste, chopped parsley and spices.
Lay 1 leave on counter, place the stuffing on the middle and roll the leave.
Place the stuffed leaves in a large pot.
Add sliced lemons, olive oil and 5-6 cups of water.
Cook it on a low heat till the leaves and rice soften.
Artichokes in Oil
Ingredients -8 portions:
8 shelled artichokes
1 fresh lemon juice
½ fresh orange juice
1 pack of frozen boiled chickpeas
6 ts Tariş olive oil
1 tsp sugar
Parsley for serving
Fill a large bowl with water and add ½ cup of lemon juice. Place artichokes in the lemon water.
Mix onions and chickpeas.
Peel carrot, potatoes and garlic and dice them.
Mix carrot and potatoes and boil for 5 minutes (all veggies should be softened) Let them cool.
Mix chickpeas – onion with the veggies.
Place artichokes on a flat pot.
Fill the middle part of artichokes with veggies mix.
Mix olive oil, lemon and orange juices, salt, sugar and garlic.
Add olive oil mixture to the pot.
Cover the pot with the lid.
Cook for 40-45 mins at a low heat.
When it is cooked, let it cool and add extra olive oil and chopped parsley.
